Pam’s Meat Loaf with Brown Sugar Glaze

Pam C’s hearty meat loaf is comfort food at its finest, with an easy glaze that’s made from ketchup, mustard, and brown sugar. Mix all the ingredients (except the meat) together first, and then add the meat and combine until it all comes together. Shape your loaf into a baking dish, then whisk up the glaze and spread it over the top. Pop it in the oven, and get ready for your kitchen to smell amazing!
Kim’s Bean Salad

This colorful bean salad from Kim M. is loaded with fiber and five types of beans (pick your favorites!) for a meal that actually fills you up. Rinse the beans, then throw everything into a big bowl with Italian dressing and balsamic vinegar. Season to taste and chill overnight. Scoop it up with corn chips and enjoy!
Amy’s Salmon with Rice and Sautéed Vegetables

Flavorful baked salmon with rice and veggies from Amy S. is a total weeknight (or lunch!) win. It has asparagus, onion, and red and orange peppers for a pop of color and crunch. Pro tip: rub olive oil or avocado oil on your foil before adding the salmon, so it doesn’t stick. Bake for 20 minutes, or until the salmon hits 145°F. Toss the veggies in with the cooked rice, pile the salmon on top, and dig in!
Elainie’s Greek Roasted Chicken and Veggies

You’ll want to add roasted chicken and veggies from Elainie to the family rotation, stat. Chicken, potatoes, carrots, zucchini, mini sweet peppers, and red onion all come together in one pan, and the Greek marinade really takes it to the next level. *If* you have leftovers, this would be great to meal prep for lunches.
