Talk about a beer to believe in! The Belgian Chimay is an authentic Trappist beer. This means that it is brewed within the walls of the Trappist monastery, Notre-Dame de Scourmont Abbey, under the control of — and responsibility of — the community of monks who live there…
I tried their Red Cap, or “Chimay Première” — the first beer to be brewed by Trappist monks, according to the monastic tradition of natural brewing. A beautiful, coppery color makes it particularly attractive.
Chimay Red Cap has a creamy head and gives off a light, fruity apricot aroma. For the best possible taste, be sure to serve each beer at its recommended tasting temperature. Red Cap is ideally consumed at the ambient cellar temperature: from 10 to 12°C (50 to 54°F).
I also encourage you to use a Chimay glass [shown above] and pour the beer into the glass slowly for optimal taste. Only this chalice-shaped glass will permit you to experience fully the aromas and flavors of Chimay — and it’s true! See more of these specialty beers pictured below:
