Traditions are always open to reinterpretation and redefining. Iconic fixtures in the Austin food scene, such as over 30-year-old Hudson’s Hill Country, formerly known as Hudson’s on the Bend, are welcoming these innovations with open arms! The new reimaged dishes, much like their old favorites, feature fresh produce and local meats from the Texas Hill Country.
This phyllo-wrapped trout (above) is no different. The tender live-caught trout wrapped in light phyllo dough is served on a delightful mushroom duxelles and sprinkled with sesame seeds. Like many of their dishes, it is carefully plated with beautiful botanicals from their fantastic garden onsight!
Colorful light salads were made for enjoying on a patio in hot Central Texas. This stunning strawberry salad (below) is everything that you would want for summer. The eye-catching fresh strawberries and pink flower garnish really make this dish pop!
