Packed with peanut butter, hearty oats, and chunks of chocolate, these monster cookies are so good, I keep a secret stash in my freezer at home! Now you can, too, with this simple recipe from BIRD Bakery's founder, Elizabeth Chambers Hammer.
Cream together butter and sugars until blended. Add eggs one at a time. Mix on medium speed until pale and fluffy, about 5 minutes. Add vanilla, baking soda and syrup. Add peanut butter and mix until smooth. Carefully add oats one cup at a time, mixing well. Stir in the chocolate chip and M&Ms, mixing until completely incorporated.
Scoop onto baking sheet using a serving spoon or small ice cream scoop. Bake at 350 degrees for 15 minutes. Enjoy!
Tip: Make the cookies ahead of time and freeze the batter before baking for a stress-free dessert or late night snack!
