Heat butter in saucepan and add flour and stir to create a roux. Next pour in chicken stock. When heated, slowly add cheese and whisk until all is melted. Add beer. Check seasoning. At this point you can add salt and/or pepper.You can top with crumbled bacon, parsley or croutons.
- 4 T Butter
- ¼ c Flour
- 4 c Chicken Stock
- 3-4 c Velveeta OR Cheddar cheese (amount depends on how thick you like your soup)
- ½ bottle beer (6-oz)
