How to Cook Low and Slow on a Basic Grill from The Original Black's Barbecue
You don't need a super expensive grill to make great barbecue. A Weber Kettle Grill is a great option. Barrett Black from The Original Black's Barbecue recommends using a 4-5lb brisket for this type of grill.
Instructions
Make a Foil Smoking Packet
- Get a piece of foil (about 12 inches long) and place a handful of post oak wood chips in the middle, then fold. Don't soak the wood chips ahead of time. Hickory is also a great option.
- Poke slits in the foil packet.
Set Up the Snake Method
- Place charcoal briquettes 3-4 high all the way around the bottom of the grill to create a consistent temperature.
- Leave a gap, and pour lit coals at the beginning of the snake.
- Place your foil packet on top of the lit coals.
- Put a water pan in the middle to create humidity for the meat. It will also catch some of the drippings.
Place Brisket on the Smoker
- Put the cooking grate back on and place the brisket opposite the fire, with the fattier, thicker side towards the fire.
Manage Airflow
- Make sure the vents on the bottom of the grill and on the top of the lid are both open. Place the lid on (make sure the vent is above the meat).
- Check the meat every hour and rotate.
Cook Time
- The snake will take about 6-7 hours to burn, which is usually good for a 4-5 lb brisket, but it all depends on the size you have.
