
Pecan-Crusted Chicken from Live Oak Grill
Ingredients
- 4 skinless chicken breasts
- 1 cup buttermilk
- ½ cup pecan pieces
- 2⅔ cup bread crumbs
- 1 tsp salt
- 2 tsp pepper
- 1 tsp cumin
- 1 tsp chicken base
Instructions
- Mix together Pecan Pieces, Bread Crumbs, Salt, Pepper, Cumin, and Chicken Base for pecan breading.
- Pound out each chicken breast, and dip into the buttermilk. Then coat each in the prepared pecan breading.
- Fry in oil for about 5 minutes, until cooked through. Serve.
To Prepare as a Salad
- Put a handful of mixed greens into a salad bowl, then add pecans, chopped tomatoes, sliced onions, shredded cheese, pickled okra, and the dressing of your choice.
- Top with the Pecan Crusted Chicken and enjoy!
