There’s another favorite dessert of the Royals that Royal Chef Darren McGrady shared with me…’Burnt Crème’ as he calls it…Crème Brulee to most of us. He shows you how to prepare it in the video, but what you don’t find out is how meticulous the Royals are about their cream….or at least they used to be.
When Darren was working at Windsor, the cream was still separated by hand. Milkmaids would hand spin the milk a gallon at a time. Eight pints of milk would produce one pint of cream. Wow! They stopped the practice after Darren left and switched to pasteurized milk for ‘safety reasons’.
