There’s a whole lot of goodness coming from our Gulf Coast this time of year, well beyond seafood standards like snapper, salmon and shrimp. Bivalves (a class of mollusk) include delicious delicacies like clams, oysters and mussels that many of the top chefs from around the world routinely employ on their menus to ‘wow’ guests like you and me. Hey, works like a charm!

Raw or cooked, the fresher the better, these briny sea creatures are celebrated for not only being great for human health, but for the health of our oceans as well. By naturally filtering sea water, they keep our oceans clean and the ecosystems that exist within sustainable. Bivalves are hearty healthy; high in protein, iron, B-12 and Omega-3. In fact, they’ve been an important source of food for centuries with the first documentation of mussels dating back to Roman times!
The Mussels with Dijon & White Wine [above] is a great group dish from my friends at Central Market. Pick your favorite dry white for the cooking process and be blown away by the finished product. Garnish with parsley and serve with day-old French baguettes — the BEST!
Another super easy fix are these Gulf Coast Oyster Roosters with a zesty homemade tartar sauce we’ll show you how to whip together pronto. The “roosters” are really saltines (pork rinds work better) spooned with cocktail and tartar sauce, topped with a chilled half oyster, candied jalapeños and radish. Beware, these bite-size buggers are highly addictive!
How about something with a kick? Sip and savor this tomato-based, Spicy Clam Soup with Basturma, or Turkish beef, garnished with cilantro. Pastrami works just as well for the Basturma btw (and most likely easier to acquire). Safe to say this is one Syrian recipe you can try stateside!
