We’ve hatched a plan for the new chicken dinner…are you in? This sunshine cuisine is as saucy as it is shareable. On tap for the summer months ahead: chubby chicken lollipops, crispy Asian chicken wings and spicy chicken skewers tamed by a creamy Greek yogurt sauce we’ll show you how to whip up from scratch.
The Chicken Lollipops (drumsticks) you see above are first smoked, fried and then rolled in a sweet ‘n sassy horseradish molasses sauce mixed with Grand Marnier, Dijon mustard and fresh orange juice. We’re talking high quality, southern style chicken from the folks at Street’s Fine Chicken up in Dallas. Best for beginnings as their menu states!
Why not ‘wing it’ with these Crispy Umami Chicken Wings courtesy of The Peached Tortilla in Austin. The Umami is essentially a Japanese fish sauce that includes ingredients like garlic, ginger, honey, lime juice and Sriracha. So, all the good stuff! Toss these deep fried wings in some sauce and let’em marinate overnight for them at their best:
Now, without feather ado (last pun – promise!), Executive Chef Robbie Nowlin with Boudro’s & Zinc Bistro in San Antonio demonstrates the ease at which these zesty Chili Garlic Chicken Skewers come together on the grill, sprinkled with fresh basil and mint. Watch our short video here. The Greek yogurt sauce it pairs with is a cooling combination of Greek yogurt, olive oil, honey, chives and a pinch of black pepper. Ready in minutes!
