Early to bed, early to rise…you know the saying! As we ‘spring forward’ this weekend, we’re here to make your morning less groggy and more sunny with bright new breakfast recipes with more pep than espresso. (Although, we won’t judge if you sip an extra one this Sunday!)
Stop hitting snooze and head to the kitchen! We promise these breakfasts are worth waking up early for.
Still not convinced? Head to Rosella in San Antonio (Jones Avenue Location) for breakfasts like that Open Faced Biscuit with Eggs Sunny-Side Up and hot coffee (above) Monday through Friday from 7 a.m. to noon and Saturdays and Sundays until 2 p.m.
Poached Eggs with Asparagus & Parmigiano Reggiano Sauce
Although many equate tulips and daffodils as spring’s signature plant, we think it ought to be asparagus! Although you can buy it year-round, we especially love it when it’s freshly harvested in the spring in the U.S. It’s especially tasty in this poached eggs recipe with a luxurious Parmigiano Reggiano sauce.
Sprightly Spinach Muffins
Who says spinach is only for Popeye and spring mix salads? This sprightly Spinach Muffin recipe is both sweet and savory, with a bit of cheese and just a teaspoon of caster sugar. (Fun fact: Crystal City, Texas, is known as the ‘Spinach Capital of the World’ and you can visit a statue of Popeye the Sailor when you visit!)
Chilaquiles Breakfast Taco
It’s one of San Antonio’s most loved breakfast tacos and we’ve finally scored the recipe! The Chilaquiles Breakfast Taco recipe was given to us by the owner of Las Palapas and it is a true taco treasure. Watch the video above to see owner Ron Acosta prepare it for you and get the full recipe here.
Breakfast Strata
Rise n’ shine for this cheesy bacon and green onion Breakfast Strata from The Buttermilk Cafe in New Braunfels. Here, creativity is encouraged! Owner Carol Irwin encourages you to “Play!” with your food here!
