Mycophiles, rejoice! We’re bringing you the ‘Queen’ of Mushroom Salads from our friends at Clementine in San Antonio!
Husband and wife duo John and Elise Russ created the White Mushroom Salad for their sensational family-owned restaurant featuring Southern and American cuisine. The recipe is the talk of San Antonio lately — one bite and you’ll understand why! They so graciously shared the recipe with our readers. It’s made with red onions, fresh slivers of radish, pomegranate seeds, parsley, extra virgin olive oil and locally-sourced lemons.
When you’ve made your way through this mouthwatering mushroom dish, ‘forage’ through these new recipes featuring mushrooms. I’ve also included wine pairings to feast accordingly!
Flatbread with Mushrooms, Caramelized Onions and Goat Cheese
This Flatbread with Mushrooms, Caramelized Onions and Goat Cheese is an amazing appetizer idea but works well for a Friday night dinner for two. This recipe is from San Antonio Chef Stephen Gonzalez’ cookbook, Getcha Grub On. Try it with a little sparkling wine, like the Langlois-Château Brut Crémant de Loire from H-E-B. (More details here).
Chicken Fried Steak with Bacon Shroom Gravy
This Chicken Fried Steak with Bacon Shroom Gravy is a comfort food favorite at Beaver’s in Houston, which we featured on Goodtaste with Tanji (watch here). It features a luxurious bacon and mushroom sauce that’s simply heavenly when paired with a classic chicken fried steak. You’ll love it with a little La Côte Blanche Chardonnay from Mâcon-Villages, an amazing wine find for $13 at H-E-B.
