Grilled Turkey and Poblano Quesadillas with Avocado Crema

Provoleta is a traditional Argentinian dish that involves searing thick slices of provolone cheese in a cast-iron skillet until melty and spreadable. This over-the-top creation is star chef Richard Blais’s take on the famous Juicy Lucy from Minneapolis.
