Already thinking about your fall-flavored side dishes? We’ve rounded up some of our favorites that go big on seasonal produce and act as the perfect accompaniment to Texas’ cooler autumn weather.
Wild Rice Pilaf
Rice dishes go well with everything, from fancy mains to basic weeknight dinners. If you’re looking for a new seasonal side to serve with tonight’s meal, this pilaf from Kevin Is Cooking answers the call with a blend of rices, onion, carrot, toasted pecans, and dried cranberries. Feel free to customize to taste with different nuts, like walnuts, hazelnuts, or almonds, and different fruits, like cherries or apricots.
Pearl Couscous Salad with Roasted Squash and Kale
Couscous is a great way to bulk up any salad, like this one from Brooklyn Supper, which combines the petite pasta with chili powder–seasoned squash, chopped kale, goat cheese, and pomegranate seeds.
Roasted Squash Salad
Roasting squash is our favorite way to enjoy this gem of the fall garden, and we love how this recipe from Minimalist Baker balances the subtle sweetness of acorn squash with the pepperiness of fresh arugula and the crunch of roasted pepitas.
Apple Salad with Celery and Peanuts
Give a bag of fall apples a savory (and spicy!) spin in this supremely crunchy salad from Bon Appétit. Dressed in a simple mix of lemon juice and olive oil, the whole thing comes together in a flash.
Feel-Good Fall Salad
One of our favorite things about this side from Gimme Some Oven is how infinitely adaptable it is. The recipe calls for roasted sweet potatoes, avocado, and pecans (all dressed in a super-simple vinaigrette), but you can mix and match based on whatever seasonal produce you already have on hand.
Roasted Brussels Sprouts and Quinoa Salad
In our book, Brussels sprouts season is reason enough to celebrate fall! We’re always looking for new recipes that make the most of these cute little cabbages, so we love this hearty salad from Emilie Eats, which fuses together roasted sprouts and squash with quinoa (or another grain of your choice) and a fresh orange juice vinaigrette.
FYI. We we were in the Dallas area and went to the beautiful Arboritum ( some of the most gorgeous gardens in the US) . They’ve built a town with th pumpkin for Halloween. We weee anxious to go downtown and try The WOOLWORTH. It’s completely. Closed. No sign of opening. So disappointed. Absolutely love your show. We record it so we never miss an episode… the disappointing thing. IWhen there’s a sporting event Your show is canceled. We’re in the Rio Grand Valley. Again… we LOVE your sho and have tried many of your selections ( some were already favs)
Hi Linda-Thank you so much for the kind feedback. I’m sorry to hear about the Woolworth being closed. I would imagine the lack of traffic in downtown right now as a result of Covid is to blame. Let’s hope they return!
