It’s time for St. Patrick’s Day again, and while it’s hard to improve upon a celebration of all things Irish, we believe a little extra spice adds more oomph to any occasion. Luckily, our little leprechauns found these Irish–Tex-Mex mash-up recipes for the perfect twist on your traditional favorites. Enjoy!
Mexican Twice-Baked Potatoes
You’ve heard of twice-baked potatoes and you’ve heard of loaded nachos. Tastes of Lizzy T came up with the inspired idea to combine the two in this flavorful side dish perfect for any occasion! After baking, serve your potatoes taco bar–style with all the fixings laid out. This recipe calls for adding the meat mixture to your potatoes, but we recommend cooking your beef separately and using it as an optional topping, especially for meat-free diners.
Irish Pub Potato Nachos
With thin-sliced potatoes taking on the role of tortilla chips, these nachos are sure to turn some heads at your next St. Patrick’s Day party. Platings + Pairings recommends toppings of cheese, bacon, and cilantro, but feel free to experiment with sour cream, sauerkraut, and even corned beef!
Mexican Corned Beef Burritos
It might sound funny—who ever heard of corned beef in a burrito?—but don’t knock it till you’ve tried it! Healthy, easy to prepare, and deeply satisfying, this recipe from Mama Maggie’s Kitchen will be a guaranteed family favorite.
Spicy Turkey Shepherd’s Pie
If we can zhuzh up shepherd’s pie with this Goodtaste recipe, then you know anything is possible, right? All it takes is chorizo, green chilies, beans, and cheese for a touch of smoky heat. The dish is even dressed for St. Patrick’s Day; just look at all that beautiful green! Tip: To get those crispy brown bits on top of the pie, use the back of your spoon to create peaks and valleys in the mashed potatoes.
Corned Beef Tacos with Beer-Battered Fries
You had us at tacos, but add in beer-battered fries and c’mon, this Half-Baked Harvest recipe is meant for your celebration from now on. Prep time for the dish is only 20 minutes, and you can serve it as an appetizer or as the main course. But keep in mind, in your zest to get the party started, make sure not to overcrowd the pot with the fries—for best results, fry only about 8 to 10 at a time.
Loaded Chips with Smoked Salmon and Sweet Corn
Having the word “loaded” in a recipe for St. Patrick’s Day is a double entendre if there ever was one—and we love it! This bowl from Abel & Cole is delicious in every sense, from its presentation to the fresh, tangy avocado and tomato salsa, cayenne-spiced sweet corn, and succulent smoked salmon. We can’t wait for you to try it!
Spicy Jalapeno Cheese Pepper Potato Patties
It’s the spin on Irish boxty (or potato pancakes) that you never knew you needed. For a side dish, it packs just the right punch—or should we say pinch? —for St. Patrick’s Day. This recipe from Allrecipes makes eight patties, so if you’re cooking for a crowd, make extra; you’ll need it! Tip: Chill your mashed potatoes before you shape them into patties so they’ll be easier to form.
Mexican Beef Stew
Instead of your traditional Irish stew, this Food Network recipe courtesy of Rachael Ray has Mexican lager (Negra Modelo is recommended), rich spices, and cocoa powder in it. While hearty for sure, by using top round rather than bottom round, the dish is lean enough that it doesn’t blow your diet. Tip: Use water to supplement if the beef stock doesn’t cover the chiles.
