
B.B. Lemon's Blue Crab Beignets
Crispy, rich and savory these poppable Blue Crab Beignets will make for the perfect starter to your Mardi Gras feast. B.B Lemon in Houston serves theirs claws-in, like a little lollipop and they’re so good, you’ll forget about those sweet powdered sugar versions.
Ingredients
Beignets
- ½ Cup mascarpone cheese
- 1 tsp. chopped chives
- 1 tsp. chopped shallots
- 6 oz. jumbo blue crab meat
- Zest of ½ a lemon
- Salt and Pepper to taste
Batter
- 1 Cup all-purpose flour
- ½ tsp. salt
- 1/3 Cup CORN STARCH
- 1 tsp. baking powder
- 1 Cup cold club soda
Instructions
Beignets
- Mix all ingredients in a bowl and portion into one oz. balls. Keep refrigerated.
Batter
- Mix batter in a large bowl and make sure the club soda is very cold. Lightly dust the beignets in flour and then dip into the batter. Fry at 350° degrees until golden brown. (You can use any frying oil.)
