Creamy Cauliflower Soup
This soup is incredibly easy and so tasty! It's a great start to a special meal or wonderful all by itself.
- 1/4 c butter
- 1 Onion sliced
- 1 clove garlic
- 1 in Medium cauliflower cutsprings
- 4 1/2 c Chicken Stock
- 5 T HALF & HALF
- Heat the butter in a large, heavy pan. Add the onion and garlic and saute until soft. Add the cauliflower and chicken stock. Cover and simmer for about an hour.
- Pour mixture in blender and puree. Add cream and check seasoning. Return to stove to heat. Serve with croutons on top or thinly sliced scallions. Delicious!
