What a great party food! Talk about impressing your guests and that significant other. Cure your own salmon and prepare this delicious bruschetta from Boudro’s.
Cure salmon with brown sugar and kosher salt in Pyrex dish. Add dill and cilantro. Wrap in cheesecloth, and marinate with tequilla. Cover with cheesecloth and refrigerate. Cure for 24 hours (turn over after 12 hours).
Slice salmon thinly on a diagonal and serve as a topping on bruschetta. Delicious!

- fresh dill
- fresh cilantro
- 2 cups tequila (approx)
