The first ever South Texas Slow Food Dinner is on the fast track to being one of the hottest dinner tickets in town. Under a big blue Texas sky at South Texas Heritage Pork farm near Floresville, the setting Sunday evening couldn’t have been more beautiful.
Chef Steven McHugh and his talented team from Luke restaurant on the River Walk dazzled the crowd – first with crab meat stuffed deviled eggs, oxtail sliders and fried oysters all paired with San Antonio’s own Alamo Beer.
Once we were all seated, a huge assortment of house-made charcuterie, pickles and marmalades were passed around along with Luke’s warm soft pretzels and whipped bacon fat laced with apples and jalapenos. Never had whipped bacon fat?…put it on your bucket list! All this food and still no end in sight, and that was such a good thing.
Our main course — an incredible pork and rooster gumbo made with Heritage Farm’s pork and farm raised chickens served with the most delicious cornbread I think I’ve ever tasted…something Chef McHugh called a smoked tasso cornbread. Incredible sides were passed around. Heirloom tomatoes with basil, slow cooked black-eyed peas and perfectly seasoned collard greens.
After devouring all that delectable food, I vowed not to eat dessert, but one bite of Chef McHugh’s light buttermilk panna cotta with Poteet strawberries eroded my resolve to skip the sweets.
I anticipated a nice evening. How could a meal under the stars be anything but. My expectations were exceeded! The second slow food event is set to hit soon after Memorial Day…I’ve already made a reservation!
