Fennel is one of those flavors that just *feels* like fall — especially when you pair it with a Burgundian style Chardonnay like the Labouré-Roi Chardonnay [Check it out for yourself on Season 2, Episode 6] Our favorite fennel recipe comes from Chef Andrew Weissman’s Signature restaurant at La Cantera Resort & Spa. His recipe for Pan Seared Diver Scallops and Braised Fennel in Orange Broth [photo above] are finished with butter and an aromatic blend of garlic, rosemary, and thyme. Get the recipe here.

Seafood Mac N’ Cheese
For a heartier, cooler weather dish, a warm and bubbling bowl of mac n’ cheese is always our go-to! Central Market wraps this recipe up with seafood of your choice, which means you can dress it up as much as you’d like — perhaps lobster or crab speaks to your fancy! It’s all layered in crunchy Panko breadcrumbs, with a dash of creole seasoning! Get the recipe here.
Garlicky Chickpea & Fennel Salad with Baked Goat Cheese
Our fabulous fennel is pulled into this one-of-a-kind crunchy salad, with fresh goat cheese and garbanzo beans. Central Market drizzles it with a tahini roasted garlic dressing for a rich finish. Don’t forget your wine glass — my wine finds will bring these bold flavors to life! Watch it here!
