Where’s the recipe for the strawberry tequila cobbler that was shown in the Armadillo Palace segment? It seemed to be on the list of recipes shown at the end of the episode, but doesn’t turn up in the dessert list or in a site search.

Strawberry Tequila Cobbler from Armadillo Palace
makes 4 servings
The owners of Armadillo Palace in Houston were trying to come up with a new dessert that captured Dutch-oven dessert style cooking when they settled on cobbler. They happened to be drinking tequila during that conversation and wondered aloud, “what would happen if we mixed tequila with macerated strawberries?” What happened was this uniquely delicious strawberry tequila cobbler. Choose fresh, ripe strawberries for the best result.
Filling Ingredients
4 cups strawberries, trimmed and cut into quarters
1 cup sugar
3 Tbsp silver tequila
1 Tbsp fresh orange juice
1 tsp orange zest
2 tsp vanilla extract
2 Tbsp water
3 Tbsp cornstarch
1 Tbsp butter
½ tsp salt
Method
In a bowl that will fit in your refrigerator, add strawberries, sugar, 2 tablespoons of tequila, orange juice, zest, and vanilla. Mix gently to combine. Place mixture in a large saucepan and begin to simmer. Meanwhile, mix water, cornstarch, and remaining tablespoon of tequila in a small bowl. When the berries are tender, about 5 minutes, stir in the cornstarch mixture, butter, and salt. Cook about 7 to 10 minutes, or until the texture resembles jam. Chill.
Dough Ingredients
4 cups all-purpose flour
2½ tsp Kosher salt
1 cup vegetable shortening or good-quality lard
¾ to 1 cup ice water
1 egg, beaten
Sugar, to top
Method
Mix together flour and salt. Using a pastry cutter or your fingers, rub the shortening or lard into the flour until mixture resembles a very coarse meal. Add water ¼ cup at a time, mixing until dough comes together but is not too sticky. Shape into a disk, wrap in plastic, and chill for at least an hour. (The dough will keep a couple of days in the refrigerator.) Preheat oven to 350. When dough is chilled, roll out dough on a floured surface to ¼-inch thickness and use a star-shaped pastry cutter to cut out as many stars as you like (note: you can use different sized star-shaped pastry cutters for added interest). Fill oven-safe porcelain dishes halfway with the filling and place the pastry stars randomly over the top. Brush with egg and sprinkle with sugar. Bake on a sheet pan at 350 for 20 minutes or until golden and bubbly. Cool slightly and serve with a scoop of vanilla ice cream on each dish.
