
Southwest Chicken Burger from Goya
Ingredients
For Chicken Burgers
- 1 lb ground chicken
- ½ cup Goya Black Beans, drained and rinsed
- ½ cup Goya corn, drained and rinsed
- 1 cup Goya red peppers, chopped
- 1 cup shredded cheese
- ¼ cup cilantro
- ½ cup Goya almond flour
- 1 egg, beaten
- 1 tsp Goya salt
- 1 tsp Goya black pepper
- 1 tsp Goya garlic powder
- 1 tsp Goya onion powder
- 1 tsp Goya chili powder
- 1 tsp Goya paprika
- baby arugula, for topping
- avocado, for topping
For Chili Lime Yogurt Dressing
- ½ cup Greek yogurt
- ½ lime, juiced
- ½ tsp Goya salt
- ½ tsp Goya black pepper
- ½ tsp Goya garlic powder
- ½ tsp Goya onion powder
- ½ tsp Goya chili powder
Instructions
- In a large bowl add chicken, black beans, corn, red peppers, cheese, cilantro, almond flour, egg, salt, pepper, garlic powder, onion powder, chili powder and paprika. Combine well.
- Split the chicken burger mixture into 6 even balls to form the patties. In a hot sauté pan or griddle, add the patties and cook for about 7 min on each side until the burger reaches an interna ltemperature of 165℉.
- To make the dressing in a small bowl, combine all of the ingredients and mix well. Set aside until ready to serve.
- Serve the burger on top of some arugula and top with sliced avocado. Drizzle with chili lime dressing and enjoy!
