Perfect wine and food pairings do happen, but usually they take a little effort to achieve.
In general, you want the weight of your wine to match the weight of your food. Heavier foods like roasted meats or dishes with heavy sauces need a full bodied wine.
Lighter food like chicken or fish go better with a lighter bodied or more delicate wine.
Also, you want to pair high acidic foods with high acidic wines. For instance, a pasta dish with tomato sauce goes well with a chianti which will compliment the acidity in the tomato sauce.

These are multi-course meals each served with a different wine paired specifically for that dish. Typically, the wine maker will tell you about the wine and why it was chosen to serve with a particular dish. These dinners are a lot of fun especially if you’re interested in learning more about wine.
