Unwind with a little ‘Unfried’ Coconut Shrimp! This recipe from Coastal Living’s Beach Cocktails book is called ‘unfried’ because while there’s no deep-frying involved, the results are equally tempting! These ‘coco-crazy’ treats go great any storebought sweet-and-sour dipping sauce.

Tommy Bahama’s Seared Scallop Sliders

Succulent scallops are spun into sliders in this beachy cool dinner or appetizer idea from Tommy Bahama in The Woodlands (you have to trust them on this — they’re all about the beach, year-round!). These Scallop Sliders are prepared with ‘Island Slaw,’ made with crispy wonton noodles, and chipotle aioli.

Good Dog Deli Dog with Housemade Giardinera

With the weather warming up, we’re craving a little grill action! Our friends at Good Dog in Houston are always grilling up good ‘dogs with scratch-made toppings like hot Italian giardiniera. Try their Deli Dog with Housemade Giardiniera or with their Apple Horseradish Slaw. This is an especially great recipe for a fun hot dog bar — an idea that’s easy on the host! Chill out this spring break with these Chilled Beef Tenderloin Tacos from Tacodeli in Austin. Their recipe uses a homemade mole sauce – muy delicioso!

I love the idea of “unfried” coconut shrimp, but when I clicked on the link for the recipe I ended up with the scallop sliders recipe.
