Watermelon Slush

This simple slush is sure to turn heads at your celebration, and it only calls for a few ingredients: watermelon (which doubles as your cocktail glass!), honey, and gin. Gray Whale Gin recommends freezing the watermelon pulp before blending and adding only a moderate amount of ice to avoid a too-watery consistency.
Mezcal Paloma

This smoky summer cocktail from Healthy(ish) Appetite is a must-try! Add the mezcal, juices and simple syrup to a glass filled with ice and stir. Top with club soda and don’t forget to swirl before garnishing. For an extra kick of flavor, rim the glass with chile seasoning. P.S. If you don’t care for the smokiness of a mezcal, you can always sub for your favorite liquor.
Mexican Carajillo Cocktail

Coffee lovers, this one’s for you! This beloved cocktail comes together with only two ingredients – espresso coffee and Licor 43. Check out this recipe from Dish ‘n’ the Kitchen, it’s sure to provide that much needed pick-me-up after a long day of celebrating!
