In my ongoing adventure of exploring wonderful food and new wines, I see a common thread in Texas. More and more restaurants are sourcing locally produced products…often organic. The result is usually better tasting food.

There’s an interesting religious farming community just outside of Waco that’s becoming known for its artisan cheeses and grains. A number of your best restaurants in Houston, San Antonio and Dallas serve their products.

It was an interesting afternoon spent just outside of Waco at a community farm…a farm that’s becoming known for artisanally produced products like stone ground corn and creamy, flavorful cheeses…products that are showing up on more and more chef’s tables around Texas.
