Try lamb. It’s a great source of protein and also packs a punch when it comes to zinc and vitamin B12 according to info I’ve seen. I’ve been a huge fan of lamb since discovering the racks sold at Costco that average about $14 for about 6 ribs…not bad!
Since then I’ve ventured out and bought other cuts of lamb at other places (Bolner’s) and have never been disappointed. The shoulder makes a great stew meat.
This recipe from Boudro’s is delicious. Marinate your lamb in this Mediterranean Charmoula sauce and then serve it with the dish as well. The added health benefit on this one is the farro – an increcibly complete whole grain that was a main source of nutrition for the Roman legions.
Wonder if Caesar had it this good! For more lamb recipes and other great food ideas, check out my friend Ed Tijerina and his compadrés at mysa.com’s section.
