Welcome to Boudro’s – the most visited restaurant in the entire city of San Antonio! There are some incredible menu items here, like their famous Guacamole for Two complete with Russian caviar. Each time I come for lunch I’m continually wowed by what Chef Manny and his team have waiting for me. This time it was Boudro’s Achiote Spiced Double Rib Lamb Chops!
Drenched in a desirable medley of hot and sweet peppers, cheesy grits and pomegranate demi glace, this dish was gorgeous to look at and even more satisfying to dig in to. The key is in the rub – that’s where all your flavor comes from! You can find the achiote paste at places like H-E-B or Central Market…anywhere with good spices.
This lip-smacking lamb is served mid-rare and doesn’t require extra time to marinate. It can go straight from seasoning onto the grill with a generous amount of salt and pepper! We paired ours with a Tempranillo which accentuates the meat nicely.
