First, let’s start with bubbles! One of my favorites is the Mumm Napa Brut Prestige; a sparkling pairs with anything, so you can’t go wrong with this pick. $15
German wines, in general, tend to pair well with spicy food because they are fruit-forward — even the dry wines. The Thomas Schmitt Riesling has just enough fruit to counter any spice, plus, it pairs great with Thai food! $13
If you really like spice, you’re going to love this combo. In the Pepperjack Porterhouse Graded Shiraz, you’ll taste a bit of tannin which provides an interesting chemistry with the chipotle in the recipe. $30
