Welcome to Texas y’all! This is the most delicious dessert from the Cabernet Grill in Fredericksburg…Chicken Fried Pecan Pie with Chocolate Jack Daniels ice cream!! It may sound ‘unusual’ but as you as can see, I couldn’t wait to taste it. Lucky for our photographer there was something left!!! You can make the pie and the ice cream ahead of time. Enjoy!
Fried Pie Preparation
Fill a deep fryer according to manufactures directions with peanut oil and heat to 350 degrees.
Set out three bowl and place flour in first bowl, milk and eggs mixed together in second bowl and Japanese breadcrumbs in third bowl.
Cut partially frozen pecan pie into eight slices and dredge each slice in flour to coat completely. Shake off any excess flour. Dip pie slice into egg mixture to coat and then into breadcrumbs. Follow these steps with each slice of pie.
Place pie slices one or two at a time into fryer and cook for about three minutes until golden brown and warm in the center. Keep pie slices warm and continue cooking remaining slices of pie.
Place the fried pie on individual plates and top with ice cream, serve immediately.
Texas Pecan Pie Preparation
Preheat oven to 350 degrees.
Place pecan pieces on a tray and place in oven for three minutes to toast.
In a medium size bowl beat eggs well and stir in corn syrup, sugar, butter, vanilla and salt.
Fold pecans into mixture and pour into the pie shell
Bake at 350 for about 50 minutes or until a knife inserted halfway between the center and edge of the pie comes out clean.
Allow pie to cool before slicing.
Chocolate Jack Daniels Ice Cream Preparation
Place cream and egg yolks in a double boiler and cook until mixture starts to thicken slightly, stirring continually. Remove from heat as soon as you are able to draw a line across the back side of a spoon that has been dipped in the cream mixture.
Add sugar, chocolate and Jack Daniels, stir until sugar and chocolate are melted.
Allow mixture to cool and pour into an ice cream maker, following manufactures instructions.
(Note: Due to alcohol content the ice cream may not set up completely in the ice cream maker and it may need to be placed in the freezer for a few hours prior to use).
